After six weeks I'm finally going back to work tomorrow. I hadn't had such a long break since I finished university too many years ago, so there is no wonder that I am a bundle of nerves. I am excited and looking forward to seeing everyone and to get stuck in work (I have really missed it!), but at the same time I have that feeling you used to get the night before going back to school after a long summer.
This week will be a test of how well I am, and I want to give myself the best chance to be full of energy, so I've been playing with different breakfasts that will keep releasing energy throughout the morning. As the weather has been getting colder this past week, I thought I would make porridge this morning and make it an autumn one.
A couple of notes before we start. I really wanted to use blackberries but my local supermarket has been out of stock for a week, so I ended up using blueberries instead. Today I used coconut milk because I love the flavour and also had some at home, but almond milk tastes amazing in porridge and of course if you prefer cow's milk, it is just as delicious. Hope you enjoy it!
- 50g oats
- 2/3 cup of coconut milk
- 1/2 grated apple
- a handful of blueberries
- 1tsp almond butter
- a sprinkle of chia seeds
- a sprinkle of cinnamon
Because I am making only one serving, I am using the lazy method of using the microwave, but you can absolutely make this on the hob.
1. Put the oats and milk into a bowl and heat it in the microwave for 2 minutes
2. Grate the apple and stir it into the oats. Heat for a further minute.
3. Add the almond butter, blueberries, chia seeds and sprinkle a bit of cinnamon on top.
I find the fruit and cinnamon gives it enough sweetness, but if you have a sweet tooth you can add something like maple syrup to keep it autumnal and warming.
